Main Ingredients
  • 2 lbs chicken breasts Can use frozen chicken.
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • Tortillas for serving Use flour or corn tortillas.
Optional Toppings
  • sour cream For serving.
  • avocado For serving.
  • cilantro For serving.
  • lime For serving.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the sliced peppers, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
Finishing
  1. Shred the chicken in the slow cooker with two forks and mix everything together.
  2. Serve in tortillas with optional toppings.

Notes

Use warm tortillas and squeeze fresh lime over the filling. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days, or frozen for up to 3 months. You can change the peppers or add a dash of cayenne for more heat.
