S'mores Pie

Ingredients
  

For the crust
  • 10 sheets 10 graham cracker whole sheets, finely crushed (about 1 and 1/3 cups crumbs)
  • 6 Tbsp 6 Tbsp unsalted butter, cut into 1 Tbsp pieces
  • 1/8 tsp 1/8 tsp heaping salt
For the filling
  • 6 oz 6 oz semi-sweet chocolate, finely chopped
  • 6 oz 6 oz milk chocolate, finely chopped (or an additional 6 oz semi-sweet if desired)
  • 2 Tbsp 2 Tbsp unsalted butter, diced into pieces
  • 3/4 cup 3/4 cup heavy cream
For the meringue
  • 3 large 3 large egg whites
  • 3/4 cup 3/4 cup granulated sugar
  • 1/8 tsp 1/8 tsp salt
  • 1/8 tsp 1/8 tsp slightly heaping cream of tartar
  • 1/2 tsp 1/2 tsp vanilla extract

Method
 

Preparation of crust
  1. Preheat your oven to 350 degrees F.
  2. In a mixing bowl, stir together the graham cracker crumbs, melted butter, and salt until the mixture is evenly moistened.
  3. Firmly press this mixture into the bottom and up the sides of a 9-inch pie plate or a non-stick tart pan.
  4. Bake until it is golden brown, about 8 to 9 minutes. Remove it from the oven and allow it to cool completely.
Preparation of filling
  1. In another mixing bowl, place the chopped semi-sweet chocolate, milk chocolate, and the 2 tablespoons of butter.
  2. In a small saucepan, bring the heavy cream just to a very light boil.
  3. Pour the hot cream over the chocolate mixture and stir until everything is melted and combined.
  4. Now pour this mixture into the cooled crust and spread it into an even layer.
  5. Chill it in the refrigerator for about 1 hour until it sets.
Preparation of meringue
  1. Add the egg whites, granulated sugar, and salt to a very clean heatproof bowl.
  2. Place this bowl over a saucepan of barely simmering water.
  3. Heat the mixture, stirring constantly, until it reaches 160 degrees on a candy thermometer, which should take about 3 to 5 minutes.
  4. After it reaches that temperature, remove the bowl from the saucepan.
  5. Add the cream of tartar and beat the mixture with an electric mixer fitted with a whisk attachment on high speed until stiff glossy peaks form, which should be around 5 to 8 minutes.
  6. Just before it’s done, add in the vanilla extract.
Assembly and serving
  1. Spread the fluff mixture over the set chocolate filling in the pie.
  2. If you have a kitchen torch, toast the meringue topping until it is golden brown.
  3. When you’re ready to serve, cut into slices.
  4. Store any leftover pie in the refrigerator for up to 3 days.

Notes

S'mores Pie is best served cold. You can slice it into generous pieces and enjoy it with coffee or tea. For a festive touch, you can add a dollop of whipped cream or sprinkle some crushed graham crackers on top.
