Ingredients
  

Sweet Potato Mixture
  • 4 large sweet potatoes, peeled and cubed About 4 pounds
  • 1/2 cup pure maple syrup
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
Topping
  • 1 cup pecans, chopped
  • 1/2 cup old-fashioned oats
  • 1/4 cup all-purpose flour Can substitute gluten-free flour
  • 1/4 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Place the cubed sweet potatoes in a large pot and cover them with water.
  3. Bring the water to a boil over medium-high heat.
  4. Reduce heat to medium and cook the sweet potatoes until tender, about 15-20 minutes.
  5. Drain the sweet potatoes and return them to the pot.
  6. Using a potato masher or electric mixer, mash the cooked sweet potatoes until smooth.
  7. In a separate bowl, whisk together maple syrup, melted butter, milk, vanilla extract, cinnamon, salt, nutmeg, and eggs.
  8. Pour this mixture into the mashed sweet potatoes and mix until well combined.
  9. Transfer the sweet potato mixture into a greased 9x13 inch baking dish, spreading it out evenly.
Topping
  1. In a medium bowl, combine chopped pecans, oats, flour, brown sugar, melted butter, and salt.
  2. Mix until everything is well coated and crumbly.
  3. Sprinkle the topping evenly over the sweet potato mixture.
Baking
  1. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the casserole is heated through.
  2. Remove from the oven and allow to cool slightly before serving.

Notes

Serve as a side dish during special occasions or family dinners. Can drizzle extra maple syrup on top for added sweetness.
