  • 3 pieces ripe bananas Use very ripe bananas for best flavor.
  • 1/3 cup melted butter Melted butter helps blend with bananas.
  • 1 teaspoon baking soda Helps the bread rise.
  • pinch salt Enhances flavor.
  • 3/4 cup sugar Adjust sweetness to taste.
  • 1 large egg, beaten Provides structure.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 cup all-purpose flour Use gluten-free flour for a GF option.
  • 1/2 cup chopped walnuts Optional, can substitute with other nuts.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract and mix well.
  6. Stir in the flour until just incorporated. If using, fold in the walnuts.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store banana bread at room temperature wrapped in plastic wrap or in an airtight container for up to 3 days. Can be frozen for up to 3 months.
