Preparation
- Preheat oven to 375 degrees F.
- Prepare baking sheets by lining them with parchment paper.
- In a large bowl, cream together the brown sugar and butter until light and airy (3-4 minutes).
- Slowly stream in the molasses, then add the egg and mix until combined and airy.
- Sift in the flour, salt, baking soda, and spices into the butter mixture, and combine on low speed until a thick dough forms.
Shaping and Baking
- Scoop about 1/4 cup of the dough into your palm and roll it into a ball.
- Roll the ball in granulated sugar to coat, then place it on a baking sheet and flatten slightly.
- Repeat, fitting 5-6 cookies on each sheet with space between them.
- Bake one tray at a time for 10-15 minutes until the edges are hardened and have spread.
- Allow cookies to cool on the baking sheet before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze cookies for up to 3 months.
