Ingredients
  

For the Chicken
  • 1 lb chicken breast or thighs, cut into bite-sized pieces Use breast or thighs according to preference.
  • 2 tbsp cornstarch Helps make the chicken crispy.
  • 2 tbsp vegetable oil For cooking the chicken.
For the Sauce
  • 1/4 cup soy sauce Can substitute with tamari for gluten-free.
  • 3 tbsp honey Can substitute with maple syrup or agave nectar.
  • 4 cloves garlic, minced Freshly minced for best flavor.
  • 1 tsp grated ginger Use fresh ginger for better taste.
  • 1/2 tsp red chili flakes Optional for a spicy kick.
For the Noodles
  • 8 oz noodles (rice noodles or egg noodles) Cook according to package instructions.
  • 1 tsp sesame seeds Optional for garnish.

Method
 

Preparation
  1. In a bowl, mix soy sauce, honey, minced garlic, grated ginger, and chili flakes to make the sauce.
  2. Toss the chicken pieces with cornstarch until evenly coated.
Cooking
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken to the skillet. Cook until golden and cooked through, about 6–8 minutes.
  3. Pour the prepared sauce over the chicken. Stir to coat well and let it simmer until thickened, about 2–3 minutes.
  4. Meanwhile, cook the noodles according to package instructions. Drain and set aside.
  5. Add the cooked noodles to the skillet with chicken and sauce. Toss to combine and coat the noodles.
  6. Garnish with chopped green onions and sesame seeds before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 2 months.
