  • 1 pound thick-cut bacon, cooked and chopped Reserve some for topping
  • 2 pounds red potatoes, washed and diced Cut into bite-size pieces
  • 1 cup sour cream Let sit at room temperature
  • 8 ounces cream cheese Soften before mixing
  • 8 ounces shredded mild cheddar cheese
  • 8 ounces shredded Colby jack cheese For topping
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 unit scallion, chopped For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine sour cream, cream cheese, cheddar cheese, salt, and pepper.
  3. Stir until well combined.
  4. Add the diced potatoes and 3/4 of the chopped bacon to the mixture. Mix until well combined.
  5. Pour the mixture into a greased 6x10 inch baking dish.
  6. Cover with aluminum foil and bake for 60 to 75 minutes, until the potatoes are fork-tender.
  7. Remove from the oven and stir the casserole.
  8. Sprinkle Colby Jack cheese over the top and bake uncovered for an additional 15 minutes.
  9. Sprinkle the casserole with reserved bacon and chopped scallions before serving.

Notes

Pair with roasted chicken or pork chops for a hearty meal. Leftovers can be stored in the refrigerator for up to 4 days, and it can be frozen for up to 3 months.
