Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine sour cream, cream cheese, cheddar cheese, salt, and pepper.
- Stir until well combined.
- Add the diced potatoes and 3/4 of the chopped bacon to the mixture. Mix until well combined.
- Pour the mixture into a greased 6x10 inch baking dish.
- Cover with aluminum foil and bake for 60 to 75 minutes, until the potatoes are fork-tender.
- Remove from the oven and stir the casserole.
- Sprinkle Colby Jack cheese over the top and bake uncovered for an additional 15 minutes.
- Sprinkle the casserole with reserved bacon and chopped scallions before serving.
Notes
Pair with roasted chicken or pork chops for a hearty meal. Leftovers can be stored in the refrigerator for up to 4 days, and it can be frozen for up to 3 months.
