  • 6 to 8 slices Good bread or brioche slices
  • 1 cup Fresh berries (strawberries, raspberries, or mixed) Can use any preferred fresh berries.
  • 2 tablespoons Butter (unsalted, room temperature) For toast and eggs.
  • 2 tablespoons Cream or milk For eggs or toast.
  • 1 teaspoon Sugar or honey For fruit or toast.
  • 1 piece Lemon For brightness.
  • 1 tablespoon Olive oil Used in toasting bread.
  • optional servings Jam or bacon jam for spread Optional, for flavor.
  • 1 tablespoon Powdered sugar For dusting over fruit or toast.
  • to taste Salt and pepper For seasoning.

Method
 

Preparation
  1. Wash the berries and cut any large fruit into small pieces. Set them in a bowl with a small spoon of sugar or honey and a squeeze of lemon. Mix and let sit.
  2. Heat a pan over low to medium heat. Add a small piece of butter and a drop of olive oil. Toast the bread slices on both sides until golden. Place on a warm plate.
  3. Beat the eggs in a bowl with a splash of cream or milk and a pinch of salt. Heat a non-stick pan and add butter. Pour in the eggs and cook on low, stirring slowly. Remove from heat when they are soft and slightly runny.
Assembly
  1. Place two slices of toast on each plate, spoon the soft eggs on top, and add fresh berries and a spoon of jam on the side.
  2. Sprinkle herbs and a light dusting of powdered sugar over the fruit if desired. Finish with a drizzle of olive oil or a small pat of butter and a lemon wedge.

Notes
