  • ½ cup Rolled Oats
  • 1 cup Almond Butter
  • 2 tbsp Honey Can be substituted with maple syrup for a vegan option.
  • ¼ cup Dried Cranberries Alternative dried fruits like raisins or apricots can be used.
  • ¼ cup Shelled Pistachios, Chopped Other nuts such as walnuts or cashews can be used.
  • ¼ cup Vanilla Protein Powder Different flavors of protein powder can be tried.
  • ¼ tsp Sea Salt
  • ½ tsp Vanilla Extract

Method
 

Preparation
  1. Combine almond butter and honey in a large bowl. Mix well.
  2. Add rolled oats, cranberries, pistachios, protein powder, salt, and vanilla extract.
  3. Mix until all ingredients are evenly distributed.
  4. Roll into 1-inch bite-sized balls.
  5. Place on a parchment-lined baking sheet, spaced apart.
  6. Refrigerate for at least 30 minutes to set.
Storage
  1. Store in an airtight container in the refrigerator for up to a week.
  2. For longer storage, freeze in a freezer-safe container for up to three months.

Notes

These bites can be served as a snack, pre/post workout boost, or sweet treat. Excellent served with almond milk or yogurt.
