Cookie Ingredients
  • 2 pieces ripe bananas
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional) Adds a nice crunch
Glaze Ingredients
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the ripe bananas, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the walnuts if using.
  6. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes or until golden brown.
  2. While the cookies are baking, prepare the cream cheese glaze by beating together the cream cheese, powdered sugar, and milk until smooth.
  3. Once the cookies have cooled, drizzle the cream cheese glaze over the top.

Notes

Store cookies in an airtight container at room temperature for 3-5 days or freeze for up to 3 months.
