  • 8 pieces flour or corn tortillas Choose according to preference.
  • 2 cups enchilada sauce Can be store-bought or homemade.
  • 1 cup shredded cheddar or Monterey Jack cheese Feel free to mix different cheeses.
  • 1 medium onion, diced For added flavor.
  • 2 cloves garlic, minced Enhances the flavors of the beef.
  • 1 tsp cumin Adds warmth to the dish.
  • 1 tsp chili powder Adjust spice level to taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions until the onions are translucent, about 5-7 minutes.
  3. Add the minced garlic, cumin, and chili powder to the skillet and sauté for another minute until fragrant.
  4. Spoon the beef mixture onto each tortilla. Roll the tortillas tightly and place them seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the rolled tortillas, ensuring they are evenly covered.
  6. Sprinkle the shredded cheese over the top of the enchiladas.
  7. Bake uncovered in the preheated oven for 20-25 minutes, or until the enchiladas are bubbly and golden.

Notes

Let the enchiladas cool for a few minutes before serving. Top with sour cream, green onions, or cilantro for added flavor. Pairs well with rice, beans, or fresh salad. Leftovers can be stored in an airtight container for up to 3 days.
