Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Mix until the potatoes are well coated.
Roasting Sweet Potatoes
- Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet.
- Roast in the oven for 40-45 minutes, stirring halfway through, until fork-tender with caramelized edges.
Cooking Beef and Onions
- While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 5-6 minutes until softened and translucent.
- Add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook for 6-8 minutes until fully browned and the internal temperature reaches 160°F (71°C).
- Drain any excess fat from the skillet and stir in the taco seasoning, cooking for another 2 minutes until fragrant.
Assembly and Serving
- In serving bowls, layer the warm roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese.
- Drizzle with hot honey to taste and enjoy immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also be frozen for up to 3 months but do not freeze avocado or cottage cheese.
