Ingredients
  

For the bowl
  • 1 lb lean ground beef (93% preferred) Can substitute with ground turkey, chicken, or lentils.
  • 2 medium sweet potatoes (peeled and diced into 1/2-inch cubes) Roast until fork-tender.
  • 1 large avocado (sliced just before serving) Prevents browning.
  • 1 cup cottage cheese (low-fat or full-fat) Rich in protein.
  • 1 yellow onion (diced) Adds flavor to the beef.
  • 2 tbsp olive oil (divided) For roasting and cooking.
  • 1 packet taco seasoning (or 2 tbsp homemade) Add flavor to ground beef.
  • 2 tbsp hot honey Adjust to taste.
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and black pepper (to taste)
  • Parchment paper (for easy cleanup)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Mix until the potatoes are well coated.
Roasting Sweet Potatoes
  1. Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet.
  2. Roast in the oven for 40-45 minutes, stirring halfway through, until fork-tender with caramelized edges.
Cooking Beef and Onions
  1. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 5-6 minutes until softened and translucent.
  2. Add the lean ground beef to the skillet, breaking it up with a wooden spoon. Cook for 6-8 minutes until fully browned and the internal temperature reaches 160°F (71°C).
  3. Drain any excess fat from the skillet and stir in the taco seasoning, cooking for another 2 minutes until fragrant.
Assembly and Serving
  1. In serving bowls, layer the warm roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese.
  2. Drizzle with hot honey to taste and enjoy immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also be frozen for up to 3 months but do not freeze avocado or cottage cheese.
