Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar Can be adjusted based on sweetness preference
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup unsweetened applesauce
  • 1/4 cup milk (or non-dairy alternative)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
Filling
  • 1 large apple, chopped Any variety of apple can be used

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine the applesauce, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chopped apple.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 15-20 minutes or until a toothpick comes out clean.
  2. Let cool for a few minutes in the tin, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Can be enjoyed with butter, honey, or maple syrup. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
