Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine the applesauce, milk, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped apple.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Can be enjoyed with butter, honey, or maple syrup. Store in an airtight container for up to 3 days, or freeze for up to 3 months.
