  • 1 lb lean ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 2 tbsp brown sugar
  • 4 each green onions, sliced (plus extra for garnish)
  • 2 cups cooked rice Use white or brown rice.
  • 1 cup bell peppers, diced
  • 1 cup carrots, sliced

Method
 

Preparation
  1. Chop the garlic, ginger, and green onions. Cook the rice according to the package directions.
Cooking
  1. In a large skillet, heat a splash of oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
  2. Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and no longer pink, breaking it apart (about 5 minutes).
  3. Stir in the soy sauce and brown sugar. Simmer for about 3 minutes to blend the flavors.
  4. Add the bell peppers and carrots to the skillet. Sauté for another 3-4 minutes until the vegetables are tender but still crisp.
  5. Serve the beef and vegetables over warm rice, and top with sliced green onions for garnish.

Notes

Leftovers can be stored in an airtight container for 3-4 days. For freezing, let the beef mixture cool completely before storing in a freezer-safe container for up to 3 months.
