Preparation
- Chop the garlic, ginger, and green onions. Cook the rice according to the package directions.
Cooking
- In a large skillet, heat a splash of oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and no longer pink, breaking it apart (about 5 minutes).
- Stir in the soy sauce and brown sugar. Simmer for about 3 minutes to blend the flavors.
- Add the bell peppers and carrots to the skillet. Sauté for another 3-4 minutes until the vegetables are tender but still crisp.
- Serve the beef and vegetables over warm rice, and top with sliced green onions for garnish.
Notes
Leftovers can be stored in an airtight container for 3-4 days. For freezing, let the beef mixture cool completely before storing in a freezer-safe container for up to 3 months.
