Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the red onion until soft and caramelized, about 15 minutes.
- Add broccoli and cook for another 5 minutes.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
Assembly
- Place the pie crust in a 9-inch tart pan.
- Spread the sautéed onion and broccoli mixture evenly in the crust.
- Pour the egg mixture over the vegetables and sprinkle with blue cheese.
Baking
- Bake in the preheated oven for 1 hour to 1 hour 40 minutes, or until the filling is set and lightly golden.
- Allow to cool slightly before slicing and serving.
Notes
Store cooled tart slices in an airtight container in the refrigerator for up to 4 days. To reheat, warm a slice in the oven at 350°F (175°C) for 8–10 minutes. For freezing, wrap tightly and freeze for up to 2 months.
