Ingredients
  

For the filling
  • 1 large red onion, sliced
  • 2 cups broccoli florets
  • 1 cup blue cheese, crumbled
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
For the crust
  • 1 pre-made pie crust 9-inch crust

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the red onion until soft and caramelized, about 15 minutes.
  3. Add broccoli and cook for another 5 minutes.
  4. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
Assembly
  1. Place the pie crust in a 9-inch tart pan.
  2. Spread the sautéed onion and broccoli mixture evenly in the crust.
  3. Pour the egg mixture over the vegetables and sprinkle with blue cheese.
Baking
  1. Bake in the preheated oven for 1 hour to 1 hour 40 minutes, or until the filling is set and lightly golden.
  2. Allow to cool slightly before slicing and serving.

Notes

Store cooled tart slices in an airtight container in the refrigerator for up to 4 days. To reheat, warm a slice in the oven at 350°F (175°C) for 8–10 minutes. For freezing, wrap tightly and freeze for up to 2 months.
